Caribbean Jerk Fajitas
Tortillas
1 lbs Chicken breast or tenderloins
1 Red Bell Pepper
1 Orange Bell Pepper
1 Onion
Shredded Cheese (any kind you prefer)
Black beans
Pico De Gallo
Avocados
Limes
Sour Cream
1. Cut Chicken into thins strips and put in plastic bag and pour Caribbean Jerk Fajita Marinade
on Chicken until well coated. Put in the fridge for 30 min.
2. Cut Bell Peppers, and Onion into thin even strips put in plastic bag and pour Carribbean Jerk Marinade until slightly coated along with 1 C pinneapple tidbits, place in fridge for 30 min. as well.
3. Heat two large pans at medium heat and pour 1 tbls. of olive oil into pan.
4. Cook Chicken until no longer pink in the middle about 10 minutes flipping once.
5. Cook bell peppers, onions, and pinneapple until tender about 8 min.
6. In a medium size sauce pan heat up black beans until hot.
6. In the mean time smash up avocado for guacamole , pour in pico de gallo until the spice is to your liking and squeeze one lime and stir together and set aside.
7. Melt cheese onto tortillas
8. Assembly tortillas to your liking!
